Creative Quinoa
My friend Laura shared this recipe with me. It’s absolutely delicious!!

- 2 cups of water
- 2 cups of quinoa
- 1 medium banana
- 1 tablespoon of curry powder
- 1 tablespoon of flax seeds
- a cup of chopped grapes
- a cup of chopped red peppers
- ¼ cup of sliced almonds
Boil water and add quinoa. Mash banana and curry powder together in a separate bowl. Once the quinoa is cooked add the banana mash and stir. Mix in grapes and red peppers. Drizzle almond on top and serve.
